Today I made the same food I made yesterday. A nice large chicken breast that was marinated for a day with a little bit of adobo, Himalayan salt, black pepper, and some cayenne pepper drizzled in some red wine vinegar. I also chopped down some red peppers with some red onions, and they were seasoned similarly. I baked it for around 40 minutes at 350 degrees. It's an incredibly basic meal, and although I want to use less adobo and make a good seasoning on the fly, it does taste pretty alright to me.
Since this is the last chicken breast from our batch of chicken, I have defrosted some shrimp that we bought from Publix. Typically, I don't like to freeze any meats or seafood from the store but considering I'm not a professional chef, I guess it is fine. lol
